Lamb Shoulder Roast
Lamb shoulder roast is delicious and easy to prepare. Let us help you cook up a very special Easter dinner!
Zesty Roast Lamb Shoulder
prep time - 20 min, marinate 1-4 hours, cook time 1.5 hours at 350 dgrees
- finely grated zest of one lemon, plus the juice 
- 2T finely chopped fresh oregano 
- 2tsp finely chopped fresh rosemary 
- 1/4c finely chopped flat leaf parsley 
- 3 cloves garlic finely chopped 
- 1/3c (about 4) finely chopped green onions (white and green parts) 
- 1c olive oil 
- salt and pepper 
- Optional for “greek style” lamb… 1/3cup finely chopped capers, and 1/3cup coarsly chopped kalamata olives 
Mix all of the above ingredients into a bowl and then coat the lamb with the mixture. Refrigerate for 1-4 hours. Add potatoes and carrots to the roasting pan if desired.
Pre-heat oven to 350 degrees, roast 20min/lb. When finished, let rest for 10-15 min before carving. Serve with roast potatoes, and carrots.
